Mermaids in Brooklyn & Ice Cream Pie
This weekend we held another edition of Salt & Sirens Supper Club in Brooklyn. The theme was loosely Tiki, Tropical Island, and Mermaids. It's really not a party without mermaids. There were several contributing cooks, including one stellar mixologist, and plenty of sparklers and lightning bugs. This is just a quick glance at the menu and a pat on the back for making it to Tuesday. I hope it inspires you to throw your own lightly planned and heavily costumed get-together this weekend. We would have taken more pictures but we were too busy eating.

The ice cream pie that finished off the night was inspired by Jessica over at How Sweet Eats. I made a coconut macaroon crust, covered it with coffee and vanilla ice cream, and topped it with Kahlua whipped cream and candied macadamia nuts. It was a huge hit ! By a necessity of summer an ice cream pie needs to disappear pretty quickly before it melts. Oh did I forget to mention we decorated the tables with sea shells and ate key-lime pie?
How to candy the macadamia:
1 cup sugar, 1 cup salted macadamia nuts, 1/2 stick butter, a dash of vanilla.
1. Place the sugar in a small saucepan over medium to high heat. Watch as the sugar begins to melt and turns deeper and deeper shades of brown. When it reaches a deep golden brown, stir in the butter and vanilla and then the macadamia nuts. Place on a greased baking sheet and break apart into little groups to set and dry. I roughly chopped my macadamia nuts for the pie and left some whole...just to snack on.
